“Food is what makes me tick.

After having been raised in  the catering sector from a tender age – my Dad was running a creperie in Paris, my Mum had several restaurants serving Bistro food – I decided to explore the vast world of culinary delights.  I left Paris for London in the bloom of  youth, aged only 19. My natural curiosity and appetite for new tastes and adventure brought me to different destination throughout Northern, Southern and Eastern Europe. I decided to try my luck and opened my first business, Pianeta Terra, in the heart of Amsterdam , a restaurant that remains successful to this day.

I landed in Bristol in 2005, eager to start a-fresh! Here I set myself for a new ‘food’ challenge by committing to three years of  nutritional training in Bristol as well as starting La Cuizine in 2007.

I have found the insights gained through learning about nutrition an enormous benefit to my work as a cook.

Everyday diet is crucial in helping us to vital and healthy and I believe that food should feed the soul as well as satiating the palette. Cooking is not just a way to feed oneself but a means to reach out to others- friends, loved ones and strangers alike- as well as a path to ones own well-being.

For these same reasons my menus are always seasonal. I aim to use the best in locally sourced produce, as well as preparing food with care to keep the maximum nutritional benefit.

I use supermarkets as little as possible and I endeavour to support local shops as I can . My main suppliers are:

  • Fish: Tovey’s in Easton Rd, a reputable fish monger supplying fish to several restaurants in Bristol
  • Meat: Dave Giles butcher on Gloucester Rd- a recognized butcher by Friends of the Earth organisation, 80% of his products are locally sourced, both organic and non-organic.
  • Vegetables: Pawsons on Gloucester Rd , Farmer’s market  or  Leigh Court farm.
  • Eggs:   They are always free range from a local egg farm
